This Catuai lot comes from Finca Rosita, a 32-hectare family-run farm in the Illimani community of Caranavi, Bolivia. The farm is owned and cared for by multiple generations of the Valverde-Aramayo family and was named in honor of their matriarch, Rosa Angelica Aramayo.
Finca Rosita sits between 1,350 and 1,750 meters above sea level and is dedicated entirely to growing coffee. Different varieties are carefully planted in separate areas of the farm, allowing each lot to be harvested and processed with greater attention to its individual character.
After harvest, the coffee cherries undergo an anaerobic fermentation in a sealed, low-oxygen environment. They are then dried whole in the fruit on patios. This process encourages deeper fruit sweetness and complexity while preserving the rich body associated with natural-processed coffees.
In the cup, this coffee opens with juicy guava and tart pink lemonade, followed by the bright, aromatic character of makrut lime leaf. As it cools, raspberry jam sweetness and dark chocolate begin to emerge, creating a cup that feels both playful and deeply satisfying.
It is fruity and expressive without losing its structure. Expect lively acidity, a jammy sweetness, and a smooth chocolate finish that brings everything together.
