This coffee is expressive from the first sip. It is juicy, sweet, and full of tropical fruit, but what we really love is how clean and balanced it stays. It is an experimental coffee with plenty of personality, without tasting overly funky or fermented.
Grown at Los Nogales in Pitalito, Huila, this Caturra comes from the Hernández family, whose history with coffee at the farm goes back generations. Today, Oscar Hernández continues his family’s work with a strong focus on experimentation, sustainability, and finding new ways to bring out the natural character of the coffee.
This lot goes through a Natural + Mosto process. After careful cherry selection, the coffee receives a brief thermal shock before undergoing a 96-hour anaerobic fermentation. During fermentation, a mosto made from a previous batch of the same Caturra is added back to the coffee, carrying native microorganisms that help guide the fermentation and develop its distinctive flavor.
The first thing that stands out in the cup is tangerine, juicy and sweet with a lively citrus brightness. Then comes a mix of ripe tropical fruit, followed by a deep brown sugar sweetness that gives the cup balance and structure. As it cools, you may find softer hints of banana, florals, and candy-like sweetness underneath.
What makes this coffee especially fun for us is how versatile it is. As a pour over, it is vibrant, juicy, and layered. As espresso, the fruit becomes more concentrated and the brown sugar sweetness really comes forward. Add milk and it transforms again, becoming creamy and almost dessert-like while still keeping its tropical character.
