The coffee is cultivated at 1,500 to 1,650 meters above sea level, where the cooler mountain climate helps the cherries develop slowly and build complexity.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eAfter harvest, the coffee undergoes a carefully controlled 100-hour co-fermentation with dried lavender flowers. The goal is not to cover up the natural character of the coffee, but to gently build on it.
